If like me you feel a little fragile today, after watching the amazing win from the Irish team against France, during the Rugby world cup yesterday, I have a lovely little salad for you. Don’t knock it until you try it, it really works! I often have this for breakfast…

Cucumber and Kiwi salad

You’ll Need:

  • 1 kiwi sliced
  • 1/3 of a cucumber ( more cucumber to the kiwi)
  • 1/2 a lemon
  • 2 table spoon of olive oil
  • St Tola crumble or any mild fresh goat’s cheese

How to?

First peel a little bit of the cucumber’s skin and slice it, but not too thinly. Peel the kiwi and slice it on top of the cucumber slices. Drizzle the olive oil on top and squeeze the half lemon ( or lime even…). I crumble some fresh goat’s cheese at the end, but it is optional. If you do, it must be young but not strong, almost sweet. A young St Tola from Clare would be perfect or a fresh French cheese from the Loire Region… A lot of good stuff come from there, they should just be enjoyed in moderation…
